Ingredients:

3 tablespoons olive oil ![]()
2 medium onions ![]()

2 tablespoons garlic ![]()
1 teaspoon dried oregano ![]()
1 teaspoon paprika ![]()
Salt and pepper ![]()
to taste
Instructions:
1. Boil tripe in a large pot of water
Cook for 1-2 hours or until the tripe is tender. Drain and set aside.
2. Heat olive oil in a pan

3. Fry onions in the pan until softened

4. Add garlic
and cook for an additional minute.
5. Add Parsley
, paprika, salt
, and pepper to the onion mixture.
6. Stir in the tripe
and cook for 5 minutes, until heated through.
